Amish Harvest Casserole (Print Version)

# Ingredients:

01 - 1 cup diced potatoes.
02 - 1 pound of ground beef.
03 - 10.5 ounces of cream of mushroom soup.
04 - 1 cup sliced carrots.
05 - 2 minced garlic cloves.
06 - 1 medium onion, chopped.
07 - 1 cup chopped green beans.
08 - 1/2 teaspoon black pepper.
09 - 1 teaspoon dried parsley.
10 - 1 teaspoon salt.
11 - 1 teaspoon dried thyme.
12 - 1 cup corn kernels.
13 - 1 cup of shredded cheddar cheese.

# Instructions:

01 - In a skillet, cook the ground beef until it's no longer pink. Drain off the grease.
02 - Toss in the onion and garlic with the beef, stir and cook until softened.
03 - Move the meat to a slow cooker and mix in the vegetables, soup, and seasonings.
04 - Put the lid on and cook on LOW for 6–8 hours, or until the veggies are soft.
05 - Sprinkle cheese in during the last 30 minutes. Let it rest for 10 minutes before eating.

01 - You can prep the veggies ahead of time.
02 - Lasts about 3–4 days in the fridge.
03 - Good to freeze for up to 3 months.
