Apple Carrot Bowl (Print Version)

# Ingredients:

→ Fruits & Veggies

01 - 1 granny smith apple
02 - 1 red delicious apple
03 - 1 cup of drained canned mandarin slices
04 - 1/4 cup of minced yellow onion
05 - 2 cups of pre-shredded carrots (find in produce section)

→ Sauces & Spices

06 - 1/4 cup mayonnaise
07 - 2 tablespoons of fresh lemon juice
08 - 1/2 cup vanilla-flavored yogurt
09 - 1 tablespoon of white sugar
10 - 1/4 teaspoon black pepper
11 - 1/4 teaspoon table salt

→ Extras

12 - 1/3 cup of dried, sweet cranberries

# Instructions:

01 - Slice both apples into thin matchsticks. Toss them in a bowl with lemon juice to coat. Let them sit for 5 minutes so they don’t turn brown.
02 - Combine the shredded carrots, diced onions, and cranberries in a big mixing bowl.
03 - After the apple slices have rested for 5 minutes, add them with the carrots. Pour in the yogurt, mayo, sugar, salt, and pepper.
04 - Stir everything together until well combined. Gently fold in the mandarin slices.
05 - Cover the bowl and chill it in the fridge for at least 3 hours. Serve when ready to eat!
