Basil Butter Chicken (Print Version)

# Ingredients:

→ Main

01 - 4 skin-on chicken breasts
02 - 1-2 garlic cloves, finely chopped
03 - Half cup basil leaves, freshly chopped

→ Seasonings & Fats

04 - About a quarter teaspoon salt, plus extra if needed
05 - Black pepper, adjust to taste
06 - 1-2 spoonfuls of olive oil
07 - 3 tablespoons butter, at room temperature

→ Citrus

08 - Thin slices from 3-4 lemons
09 - A teaspoon or two of fresh lemon juice

# Instructions:

01 - In a small bowl, stir together the butter, basil, garlic, salt, and pepper. Chill for about 15 minutes until it firms up.
02 - Slide your fingers under the chicken skin and spread that herby butter mix generously underneath.
03 - Heat olive oil in a skillet, lay down the lemon slices, then place the chicken with the bones touching the pan. Sprinkle with seasonings and add a splash of lemon juice.
04 - Pop the lid on and cook over low/medium heat for about 25-30 minutes. Let the liquid cook off, then turn up the heat and flip the chicken for a golden-brown finish.
05 - Flip the chicken back over one last time, sprinkle with fresh basil, and serve. Make sure the internal temperature hits 165°F to be safe!

02 - Leftover chicken keeps fresh for up to three days in a sealed container
