In a small bowl, stir together the butter, basil, garlic, salt, and pepper. Chill for about 15 minutes until it firms up.

Slide your fingers under the chicken skin and spread that herby butter mix generously underneath.

Heat olive oil in a skillet, lay down the lemon slices, then place the chicken with the bones touching the pan. Sprinkle with seasonings and add a splash of lemon juice.

Pop the lid on and cook over low/medium heat for about 25-30 minutes. Let the liquid cook off, then turn up the heat and flip the chicken for a golden-brown finish.

Flip the chicken back over one last time, sprinkle with fresh basil, and serve. Make sure the internal temperature hits 165°F to be safe!
