Sweet Potato Beef Casserole (Print Version)

# Ingredients:

01 - 2 teaspoons parsley flakes.
02 - 2 medium-sized sweet potatoes, chopped.
03 - 1 tablespoon of olive oil.
04 - 1/2 teaspoon each of salt and black pepper.
05 - 1/4 teaspoon garlic powder.
06 - 2 teaspoons crushed dried rosemary.
07 - 1 pound of lean ground beef.
08 - 1 medium yellow onion, chopped into little pieces.
09 - 14.5 oz vegetable broth (or stock).
10 - 1/2 cup heavy cream.
11 - 1 1/3 cups quick-cooking rice.
12 - 2 cups shredded cheddar cheese.

# Instructions:

01 - Set the oven to 400°F. Toss diced potatoes with oil and spices in a casserole pan.
02 - Bake your potatoes in the oven for about half an hour.
03 - In a skillet, cook ground beef until browned. Stir in chopped onion and let it soften.
04 - Stir in broth, cream, and rice to the beef mix, then pour everything over the potatoes. Cover the dish and bake for 15 minutes.
05 - Sprinkle cheddar cheese on top, then bake uncovered for 10 minutes until bubbly.
06 - Let it sit for 10-15 minutes, then sprinkle parsley on top before serving.

# Notes:

01 - Any variety of sweet potatoes works.
02 - If using fattier beef, drain off the grease.
03 - Feel free to swap vegetable broth with chicken broth.
