Simmer blackberries, sugar, water, and lemon juice in a pot for 20-30 minutes, mashing as they cook. Let it cool to room temp.

Soften puff pastry for about 20-25 minutes. Roll it flat on a dusted surface into a rectangle. Spread some jam and goat cheese over half of it.

Slice pastry into 12 strips, fold each one over and gently twist. Repeat the steps with the second sheet.

Paint the twists with beaten egg, sprinkle lemon-thyme sugar on top, and bake at 400°F for 16-18 minutes until golden. Let them cool before eating.
