Blackberry Puff Twists (Print Version)

# Ingredients:

01 - 2 cups fresh blackberries.
02 - 2 sheets of puff pastry.
03 - 3/4 cup granulated sugar.
04 - 1 tablespoon juice from a lemon.
05 - 1/2 cup plain water.
06 - Zest of 2 lemons.
07 - 8 ounces soft goat cheese.
08 - 1 egg, beaten.
09 - 2 teaspoons chopped fresh thyme.
10 - 4 teaspoons coarse sugar for topping.

# Instructions:

01 - Simmer blackberries, sugar, water, and lemon juice in a pot for 20-30 minutes, mashing as they cook. Let it cool to room temp.
02 - Soften puff pastry for about 20-25 minutes. Roll it flat on a dusted surface into a rectangle. Spread some jam and goat cheese over half of it.
03 - Slice pastry into 12 strips, fold each one over and gently twist. Repeat the steps with the second sheet.
04 - Paint the twists with beaten egg, sprinkle lemon-thyme sugar on top, and bake at 400°F for 16-18 minutes until golden. Let them cool before eating.

01 - You can make the jam ahead and store it in the fridge.
02 - They taste best when served at room temperature.
