Easy Pan Burritos (Print Version)

# Ingredients:

→ Base

01 - 4 cups shredded cheddar
02 - 12 fresh eggs
03 - 3 tablespoons of melted butter
04 - 2 pounds of ground sausage
05 - 10 tortillas made with flour

→ White Gravy

06 - ½ teaspoon ground black pepper
07 - ½ teaspoon table salt
08 - 4 tablespoons plain flour
09 - 4 tablespoons of butter
10 - 2 cups of full-fat milk

→ Vegetables

11 - 1 green onion bunch, thinly sliced
12 - 1 bell pepper (red), finely diced

# Instructions:

01 - Turn your oven on to 425°F. Melt butter and stir in flour in a small pot to make gravy. Slowly whisk in milk, cooking it until thick, then sprinkle in pepper and salt.
02 - Brown the sausage in a skillet, then drain the grease. Beat the eggs and cook them until they’re nice and scrambled.
03 - Coat a baking pan lightly with melted butter. Press 6 tortillas along the pan’s edges and place 2 in the center, tucking them into corners.
04 - Spread out the gravy first, then layer sausage, scrambled eggs, diced peppers, sliced green onions, and shredded cheese. Lay the last tortillas on top and fold the edges inward.
05 - Brush the top with butter and set another pan on top to press it down. Bake for 20 minutes, then take off the top pan and bake for 5 more until golden.
