Jalapeno Hot Sauce (Print Version)

# Ingredients:

01 - 1 ounce garlic, diced
02 - 8 ounces of jalapeno peppers, finely chopped (roughly 8 small ones or 4-5 large ones)
03 - 1 ounce white onion, diced
04 - 1/4 teaspoon table salt
05 - 1/4 cup fresh-squeezed lime juice
06 - 1/2 cup distilled white vinegar

# Instructions:

01 - Dump all the ingredients together in a blender or processor and blend until it’s silky smooth.
02 - Pour the blended mix into a small pot and let it gently bubble for 10 minutes. Don’t overdo it with the heat, or the color might change. Let it sit a bit to cool down.
03 - Give it a taste. Add more lime juice or salt if it feels it’s missing something. For a smoother texture, you can strain it, though it’s optional.
04 - Transfer into bottles. Let it rest to really let the flavors come together—24 hours is ideal before using it.
