Golden Onion Jasmine Rice (Print Version)

# Ingredients:

→ Base

01 - 2 cups broth (vegetable or chicken) or water
02 - 1 1/2 cups of jasmine rice

→ Aromatics & Fats

03 - 1 tablespoon olive oil
04 - 2 tablespoons of butter
05 - 1 large onion, finely sliced

→ Seasonings

06 - 1 teaspoon garlic powder (optional)
07 - 1 tablespoon finely chopped fresh parsley (optional for topping)
08 - 1 teaspoon salt
09 - 1/2 teaspoon ground black pepper

# Instructions:

01 - In a wide skillet, warm the olive oil and a tablespoon of butter over medium heat. Toss in the onion slices and sprinkle with a pinch of salt. Stir occasionally for about 12-15 minutes until soft and golden. Move them aside for later.
02 - Rinse the jasmine rice thoroughly under cool water until the cloudiness disappears. This washes away extra starch.
03 - Take a saucepan and melt the last tablespoon of butter over medium heat. Mix in the rinsed rice, giving it a good stir to coat it evenly with butter.
04 - Pour in the broth or water along with salt and black pepper. Let it boil, then turn the heat down to low. Pop on the lid and cook for 15-18 minutes, or until the liquid is gone and the rice is tender. Leave covered for an extra 5 minutes before fluffing.

# Notes:

01 - Using broth instead of water gives richer flavor.
