Louisiana Voodoo Fries (Print Version)

# Ingredients:

01 - Medium russet potatoes (6).
02 - 2 tablespoons olive oil, extra virgin.
03 - 1-2 tablespoons of Cajun spice mix.
04 - 1/4 cup ranch dressing, plus more for dipping.
05 - 2 tablespoons butter.
06 - 2 tablespoons of all-purpose flour.
07 - 2/3 cup milk.
08 - Shredded cheddar cheese (2 cups).

# Instructions:

01 - Peel, wash, and dry the potatoes. Slice into fries about 3/4-inch wide and 3 inches long.
02 - Steam the fries over low boiling water for 10-12 minutes. They should be tender when pierced with a knife but still firm. Coat gently with the oil.
03 - Spread out fries in a single layer on a baking tray. Roast in the oven at 450°F for 20-25 minutes, flipping the pan halfway through.
04 - Warm up the butter until melted, stir in flour and milk until smooth. Mix in the cheese until fully melted and creamy.
05 - Sprinkle the fries with Cajun seasoning and pour cheese sauce and ranch over the top. Offer extra sauces on the side for dipping.

# Notes:

01 - Only steam the potatoes until they’re soft enough, but not falling apart.
02 - Start light with Cajun seasoning, then adjust how much you add based on your liking.
03 - Keep dipping sauces in separate bowls so fries stay crispy.
