Cinnamon Blondies (Print Version)

# Ingredients:

01 - ¾ cup softened butter (unsalted).
02 - ¾ cup white sugar.
03 - ¾ cup packed light brown sugar.
04 - 2 eggs at room temperature.
05 - 2 teaspoons vanilla.
06 - 2⅓ cups plain flour, or a bit extra if needed.
07 - 1½ teaspoons of baking powder.
08 - ½ teaspoon of tartar powder.
09 - ½ teaspoon of salt.
10 - 1 cup white chocolate chips, with an extra tablespoon for topping.
11 - ¼ cup sugar (used in filling).
12 - 2 teaspoons cinnamon (used in filling).

# Instructions:

01 - Preheat your oven to 350°F. Grab a 9-inch square pan and line it with parchment paper, leaving some over the edges.
02 - Mix the butter and both sugars together until they're light and airy, about 2-3 minutes. Add eggs and vanilla, then mix the flour blend in. Stir in a cup of chips.
03 - Press half the dough into the pan. Sprinkle over the cinnamon-sugar blend (save 1 teaspoon). Flatten chunks of the rest of the dough and place on top.
04 - Scatter the remaining chips over it and sprinkle on the reserved cinnamon-sugar. Bake for 32-35 minutes, checking if it’s done with a toothpick—it should come out mostly clean.
05 - Let it cool in the pan for a full hour before cutting it into bars.

# Notes:

01 - Store in the freezer for up to 3 months—it keeps great.
02 - Using cream of tartar isn’t required but gives that classic flavor.
