Fresh Christmas Spinach (Print Version)

# Ingredients:

→ Lime Honey-Mustard Dressing

01 - 3 tablespoons of honey
02 - ⅓ cup of extra virgin olive oil
03 - Juice from 1 large lime
04 - 3 tablespoons Dijon mustard

→ Spinach Pecan Salad

05 - ½ cup of dried cranberries
06 - ⅓ cup of pomegranate seeds
07 - ⅓ cup crumbled goat cheese
08 - 6 ounces of baby spinach
09 - 3 peeled mandarin oranges, broken into sections
10 - 1 cup of pecans, toasted (some chopped)

# Instructions:

01 - In a jar, mix the honey, lime juice, olive oil, and Dijon mustard. Use a fork to whisk it all together till smooth. Taste and tweak the lime if needed.
02 - Lay out some spinach on each plate or in bowls. Scatter cranberries, mandarin chunks, pecans, goat cheese, and pomegranate on top. Spoon over the dressing.
03 - For a single large salad, toss spinach, cranberries, mandarin pieces, goat cheese, and dressing in a big bowl. Add the pecans and pomegranate seeds on top at the end.
