Keto Cloud Bread (Print Version)

01 - 50 grams (1.8 oz) cottage cheese
02 - 1/4 teaspoon Italian herbs
03 - 3 eggs, separated
04 - 1/4 teaspoon salt
05 - 1/4 teaspoon baking powder

# Instructions:

01 - Set your oven to warm up at 150°C (300°F).
02 - Crack eggs and separate yolks from whites, placing them in two bowls.
03 - Grab an electric mixer and whip the egg whites with the baking powder until stiff tips stand up.
04 - In another bowl, stir together the cottage cheese and yolks until smooth.
05 - Gently mix the yolk-cheese mixture into the egg whites in small amounts. Add salt and herbs carefully so the batter stays fluffy.
06 - Use a spoon to make 6 small rounds of batter on parchment paper on a baking tray. Place in the oven, and cook for about 20 minutes, watching it closely during the last 5 minutes.

# Notes:

01 - This low-carb, keto-focused cloud bread mostly uses eggs and cottage cheese. It’s only 43 calories per serving and high in protein.
02 - Want smaller portions? Make 10 smaller rounds instead of 6 bigger ones.
03 - Cottage cheese is low-FODMAP up to 40g. Each bread has about 8g. Use lactose-free cottage cheese if you can’t handle lactose.
