Creamy Crab Pasta (Print Version)

# Ingredients:

01 - 12-16 oz imitation crab, pulled into small chunks
02 - 1 lb dry pasta (like rotini or bowtie)

→ Dressing

03 - 1 lemon, squeezed for juice
04 - 1/2 cup buttermilk
05 - 1 cup mayonnaise
06 - 2 tablespoons parsley, chopped
07 - 1 teaspoon onion powder
08 - 2 cloves garlic, finely minced
09 - 1/2 teaspoon seasoned salt (Lawry's is a good choice)
10 - 2 tablespoons sugar (optional)
11 - A sprinkle of salt and pepper, or as needed
12 - 4 green onions, sliced thin (optional)

# Instructions:

01 - Bring a big pot of water to a boil with a tablespoon or two of salt. Cook your pasta according to the instructions on the box (about 10-12 minutes). Once done, drain it, rinse with cold water, and leave it to cool entirely.
02 - While the pasta's boiling, shred or cut the imitation crab into smaller pieces.
03 - In an oversized bowl, stir together the crab, lemon juice, buttermilk, garlic, mayo, and the rest of the seasoning. Make sure it's mixed through.
04 - Take the pasta once cool and toss it with the crab dressing until everything’s coated evenly. Sprinkle green onions on top if you like.
05 - Let the dish chill in the fridge for at least an hour, or even overnight if you plan ahead. Give it a toss before serving.

01 - Makes enough to serve about 8 people.
02 - In a rush? Cool hot pasta in an ice bath for 2-3 minutes to save time.
03 - If buttermilk isn’t around, you can swap it with a substitute.
