Pink Sauce Pasta (Print Version)

# Ingredients:

→ Base

01 - 300g of your favorite pasta type (like penne)

→ Sauce Base

02 - 1 small red onion, finely chopped
03 - 4 cloves garlic, finely chopped
04 - 2 tablespoons unsalted butter
05 - 1 tablespoon olive oil

→ Sauce

06 - ½ cup of milk
07 - ½ cup heavy cream
08 - ⅓-½ cup mozzarella, shredded
09 - 1½ cups tomato puree (or passata/sauce)

→ Seasonings

10 - 1 chicken stock cube, crumbled
11 - A small pinch of sugar
12 - 1 teaspoon dried basil
13 - Salt and black pepper, as needed
14 - Red chili flakes, as spicy as you want

# Instructions:

01 - Boil your pasta until it's just cooked (check the box for directions). Save a bit of the pasta water before draining.
02 - In a big frying pan, warm the oil and butter. Let the onion soften as it cooks for 4-5 minutes, then toss in the garlic for another minute.
03 - Pour in your tomato puree, basil, crumbled stock cube, sugar, chili flakes, and season with salt and pepper. Let it bubble a little. Then stir in your cream, milk, and cheese.
04 - Toss the cooked pasta into the sauce and mix it all together. Gently heat it up and stir in some pasta water if your sauce feels too thick. Serve while hot.

# Notes:

01 - You can throw in some shrimp or chicken, if you’d like
02 - Best enjoyed fresh after making
03 - Thin the sauce with pasta water if it gets too thick
