Creamy Salmon Dinner (Print Version)

# Ingredients:

→ Salmon

01 - 4 salmon fillets (skin-off)
02 - 2 teaspoons Italian seasoning (dried)
03 - ¼ teaspoon black pepper (cracked)
04 - ½ teaspoon Kosher salt
05 - 2 tablespoons olive oil (split amount)

→ Cream Sauce

06 - 1 teaspoon lemon zest
07 - 3 tablespoons unsalted butter
08 - 3 tablespoons all-purpose flour
09 - 2 teaspoons garlic (minced)
10 - ¾ cup cream (heavy)
11 - ½ cup Parmesan cheese (grated)
12 - 1 1/2 cups chicken broth
13 - ½ cup sun-dried tomatoes (well drained)
14 - 1 teaspoon Italian seasoning (dried)
15 - Optional: fresh basil for topping

# Instructions:

01 - Coat fillets with olive oil, then sprinkle with pepper, salt, and Italian seasoning.
02 - In a big skillet, heat 1 tablespoon of olive oil on medium-high. Sear the salmon for about 3 minutes on each side until it gets a nice color. Set the fish aside.
03 - Using the same pan, sauté the garlic in melted butter for half a minute. Stir in the flour so it turns into a smooth paste.
04 - Pour in the chicken broth slowly and whisk along with the Parmesan and cream. Toss in the lemon zest, dried seasoning, and sun-dried tomatoes. Simmer until the sauce thickens, adding more seasoning if needed.
05 - Put the salmon back in the pan and cook gently for 10 minutes on low heat. Sprinkle with fresh basil and some extra lemon zest, if you like.
06 - Enjoy warm over your choice of rice or noodles.

# Notes:

01 - Goes great with rice or pasta.
02 - You can prep the sauce early and warm it up before serving.
