Creamy Tortellini Soup (Print Version)

# Ingredients:

01 - ½ onion, chopped into tiny pieces.
02 - ¾ pound of mild or spicy Italian sausage.
03 - 1½ teaspoons of dried Italian herbs.
04 - 2 tablespoons of tomato paste.
05 - ¾ teaspoon of salt.
06 - 3 cloves of garlic, finely chopped.
07 - 4 cups of chicken broth, low in sodium.
08 - 2 stalks of celery, cut into thin slices.
09 - 2 large carrots, peeled and diced.
10 - 2 cups fresh spinach or kale, roughly chopped.
11 - 1 cup of cream.
12 - 3 cups of cheese tortellini, either fresh or frozen.
13 - ¼ cup of Parmesan cheese, finely shredded.

# Instructions:

01 - In a skillet over medium heat, cook the sausage and onions till golden, then drain off any extra grease if you want.
02 - Mix in the tomato paste, garlic, herbs, and salt. Let it cook for about 2 minutes.
03 - Spoon the sausage mixture into the slow cooker. Add in the broth, carrots, and celery.
04 - Put the lid on and cook on the low setting for 5 to 6 hours, or on high for 2 to 3 hours until veggies are soft.
05 - Mix in the cream, Parmesan, spinach, and tortellini. Let it go for another 10 to 15 minutes until the pasta is done.
06 - Give it a taste test and adjust salt or seasonings if needed before serving.

01 - Try using chicken or white beans in place of sausage.
02 - Feel free to use any kind of cream you prefer.
