Crispy Chicken Romesco (Print Version)

# Ingredients:

→ Chicken

01 - Two chicken breasts, sliced horizontally to make four thin fillets
02 - 50g plain flour
03 - 50g crispy panko crumbs
04 - 1 egg, beaten
05 - 2 tbsp of olive oil

→ Romesco Sauce

06 - A couple of garlic cloves
07 - Two roasted red peppers, jarred
08 - Four pieces of sun-dried tomatoes
09 - 2 tbsp almonds
10 - Half a tablespoon of balsamic
11 - 4 tbsp olive oil (add more if necessary)
12 - 1 tsp of paprika
13 - 2 tsp of kosher salt

→ Salad

14 - Two tablespoons of sour cream
15 - A tablespoon of mayo
16 - Juice from half a lemon
17 - One tablespoon grated parmesan cheese
18 - Freshly cracked black pepper
19 - Five chopped gem lettuce leaves
20 - Handful of fresh arugula or rocket

→ Assembly

21 - Small focaccia loaves (or cut sandwich-sized pieces)
22 - 4 tbsp softened butter
23 - 5g freshly chopped parsley
24 - Three minced cloves of garlic
25 - Plenty of grated parmesan

# Instructions:

01 - Cut the chicken breasts to make four flat pieces. Dredge them by coating first with flour, then dipping in whisked egg, and finally pressing into the panko. Fry with olive oil on medium heat for about four minutes on each side until golden brown.
02 - Blend everything for the romesco until you get a smooth texture. If it's too thick, just pour in a little more olive oil until it feels right. Keep it ready.
03 - Stir together the sour cream, mayo, lemon juice, parmesan, and pepper. Toss that dressing over the chopped lettuce and rocket leaves to coat.
04 - Combine the butter with the garlic and parsley. Cut the focaccia in half and slather the butter mixture evenly on the insides. Sprinkle grated parmesan generously on top and broil until bubbly and crisp.
05 - Spread the romesco generously on both insides of the focaccia. Layer the crispy chicken and salad mix on the bottom. Cover with the top piece and press lightly. Wrap in parchment before serving.

02 - Keep sandwiches fresh in the fridge wrapped in parchment paper
