Cheese Stuffed Doritos (Print Version)

# Ingredients:

01 - Block of low-moisture mozzarella, 14oz (400g)
02 - Bag of Doritos (Chilli Heatwave flavor), 6.4oz (180g)
03 - 1 litre (4 cups) of sunflower or vegetable oil for frying
04 - Flour, 1/3 cup (50g)
05 - 2 eggs, whisked

→ Spice Mix

06 - 1/4 teaspoon of fresh ground black pepper
07 - 1 teaspoon of smoked paprika
08 - Cayenne pepper, 1 teaspoon
09 - 1/4 teaspoon of salt
10 - Garlic powder, 1/2 teaspoon

# Instructions:

01 - Chop the mozzarella into squares about a third of an inch thick. Slice each one into triangles to make 24 wedges.
02 - Use a food processor or a bag with a zip to crush your Doritos into fine crumbs. Place flour in one shallow dish and stir with spices. In the second dish, pour in eggs. Use the third for your crushed Doritos.
03 - Take each triangle and dip it first in the flour mixture, then the egg, and finally cover it well in Dorito crumbs. Let them sit to firm up for 10 to 15 minutes.
04 - Get your oil hot, around 350F/180C. Fry cheese pieces a few at a time for about 1 or 2 minutes. Once the cheese starts oozing, they're ready. Put them on a wire rack and sprinkle a little salt while warm.

# Notes:

01 - Low-moisture mozzarella works the best for this dish.
02 - You can double-coat them for a thicker crust. Just use extra Doritos and eggs, but it'll be messier.
03 - Try air frying or baking at 400F/200C if you freeze the cheese pieces beforehand.
04 - Serve hot with dips like marinara, garlic herb, salsa, or sour cream and chive.
