Tater Tot Cups (Print Version)

# Ingredients:

01 - Olive oil cooking spray.
02 - 2 green onions, sliced thin after trimming ends.
03 - 1 tablespoon plain Greek yogurt.
04 - 1 cup cooked and chopped bacon bits.
05 - 1 cup shredded colby cheese.
06 - 60 frozen tater tots.

# Instructions:

01 - Set the oven to 350-375°F. Spray a muffin pan (12 wells) generously with oil.
02 - Pop 5 tater tots into every muffin spot. Bake them for 10 minutes, then use a shot glass to press down and create cups.
03 - Top the tots with bacon bits and cheese. Stick them back into the oven for about 10-15 minutes, until the bacon is crisp and the cheese is gooey.
04 - Allow to cool for a short while. Carefully transfer cups onto a lined tray.
05 - Add a dollop of Greek yogurt on each one and toss some green onions on top. Serve while they're warm!

# Notes:

01 - Feel free to swap out the cheese for something else.
02 - Sour cream works if you don’t have yogurt.
