Southern Salmon Patties (Print Version)

# Ingredients:

01 - 1/4 teaspoon chili powder
02 - 1 large egg
03 - 1/4 cup yellow cornmeal
04 - 1 (14.75 oz) can of pink salmon (bones optional)
05 - Salt and pepper as you like
06 - 1/4 cup chopped onion
07 - 1/4 cup flour (all-purpose or almond)
08 - 3 tablespoons mayo
09 - 1/2 tablespoon oil (olive or vegetable)

# Instructions:

01 - Completely drain the salmon, then pop it into a large bowl. Use a fork to flake it apart till it's fine.
02 - Dump in the onion, cornmeal, flour, mayo, chili powder, egg, and seasonings. Mix until it's all blended nicely.
03 - Form the mixture into patties about the size of a burger. A measuring cup can help make them even.
04 - Warm up the oil in a pan over medium. Fry the patties for roughly 5 minutes per side till they're golden and crunchy.
