Completely drain the salmon, then pop it into a large bowl. Use a fork to flake it apart till it's fine.

Dump in the onion, cornmeal, flour, mayo, chili powder, egg, and seasonings. Mix until it's all blended nicely.

Form the mixture into patties about the size of a burger. A measuring cup can help make them even.

Warm up the oil in a pan over medium. Fry the patties for roughly 5 minutes per side till they're golden and crunchy.
