Greek Tomato Fritters (Print Version)

# Ingredients:

01 - Chop 2 big tomatoes into fine pieces (about 250g).
02 - 1/2 a red onion, diced small.
03 - 2 garlic cloves, grated finely.
04 - The grated peel from 1 lemon.
05 - 85 grams of all-purpose flour.
06 - 1/2 teaspoon of baking powder.
07 - 10 grams (about 1/2 a small bunch) of dill, chopped.
08 - Roughly chop 15g of parsley leaves (half a small bunch).
09 - Pinch of salt (1/2 teaspoon), adjust to your liking.
10 - Fresh black pepper, as much as you prefer.
11 - Olive oil for frying, enough to coat the pan.

# Instructions:

01 - Dice your fresh tomatoes nice and small, then toss them into a big bowl.
02 - Mix in the onion bits, garlic paste, lemon peel, and herbs. Toss this around before adding the dry stuff: flour, baking powder, salt, and black pepper. Stir until you’ve got a thick, sticky batter.
03 - Pour enough olive oil to lightly cover the pan bottom, then heat it on medium.
04 - Scoop spoonfuls of the mixture into the hot oil. Fry until golden on one side, flip carefully, and cook the other side until browned too.
05 - Take the cooked fritters out of the pan, and enjoy them fresh and crunchy.
