For dates that aren't already pitted, take out the pits. Slice each one partway down to create a small pocket.

Put parchment paper onto a baking sheet that fits in your freezer, or use a freezer-safe plate. Lay the dates open-side up on the parchment.

Spoon some nut butter into each of the dates, filling them about three-quarters full. Pop a few nuts inside, then gently close them up. Freeze for 15-20 minutes.

Start melting your chocolate while the dates chill and let it cool slightly once it's liquid and smooth.

Take the chilled dates out of the freezer and cover them in melted chocolate. Use two spoons to coat them fully or drizzle if you'd like a lighter coating.

Sprinkle some flaky salt on top, then freeze again for 20-30 minutes until the chocolate firms up.
