Quick Potsticker Soup (Print Version)

# Ingredients:

01 - 2 teaspoons sesame oil.
02 - 6 cups veggie stock.
03 - 4 garlic cloves, chopped small.
04 - 5 scallions, thinly sliced.
05 - 2 tablespoons grated fresh ginger.
06 - 2 tablespoons soy sauce.
07 - 16-20 oz frozen dumplings.
08 - 3 baby bok choy, trimmed and leaves separated.
09 - 8 oz shiitake mushrooms, cut thin.
10 - 2 tablespoons olive oil, split into two uses.
11 - Black pepper as needed.

# Instructions:

01 - In a big pot, add 1 tablespoon of the oil and warm it up over medium-high. Toss in the mushrooms and cook until they’re golden.
02 - Pour in the second tablespoon of oil and stir in garlic plus ginger. Let it cook for a minute or so until you smell the aroma.
03 - Add soy sauce and stock. Bring it all up to a nice bubbling boil.
04 - Put in frozen dumplings, bok choy, and part of the scallions. Let everything cook together for 3-4 minutes until the dumplings are heated through.
05 - Mix in sesame oil along with some black pepper. Give it a taste and tweak as needed.

# Notes:

01 - Dump it out fresh, or the dumplings might get too soft over time.
02 - Switch it up with other fillings or veggies to suit your tastes.
