Put the white chocolate in a measuring cup. Place the cup inside a pot filled with water up to the 8 oz mark. Heat on medium-low for 5-8 minutes, stirring now and then to melt it smoothly.

Grab a big mixing bowl and toss in the cereal with the coconut. Drizzle the melted chocolate over it and stir thoroughly until everything is coated.

Drop spoonfuls onto a lined tray, making them about snowball size. Sprinkle the tops with extra coconut for a little decoration.

Let them chill in the fridge for at least 15-20 minutes. Wait for the chocolate to harden completely.
