Egg Tomato Soup Noodles (Print Version)

# Ingredients:

01 - 5 cups of chicken or veggie broth.
02 - 2 portions of noodles.
03 - A dash of salt (to your liking).
04 - 2 green onions, finely chopped.
05 - 1 1/2 tablespoons of soy sauce.
06 - 2 1/2 tablespoons of ketchup.
07 - 1 teaspoon of ground white pepper.
08 - 3 fresh eggs.
09 - 4 medium tomatoes, diced.

# Instructions:

01 - Crack eggs in a bowl, whisk with some salt and white pepper.
02 - Heat oil in a pot, pour in eggs, let them firm up for half a minute, then lightly scramble. Take them out.
03 - Throw tomatoes into the same pot, stir and cook for a few minutes on medium-high heat.
04 - Cook the white stalks of green onions for about a minute or two until tender.
05 - Stir in the soy sauce, ketchup, and a pinch of white pepper until combined.
06 - Pour in the broth, bring to a light boil. Toss in the noodles and eggs, let it simmer for a couple of minutes.
07 - Sprinkle with the chopped green onion tops and dish it up.

# Notes:

01 - Follow noodle package instructions to cook them in advance, or directly in the broth.
02 - Season to your liking.
03 - Feel free to add other proteins or veggies if you want.
