Cranberry Whipped Feta (Print Version)

# Ingredients:

01 - Chopped pistachios—about ¼ cup.
02 - 8 oz (225g) of feta cheese.
03 - Tiny pinch of nutmeg, just ¼ teaspoon.
04 - Fresh thyme sprigs for a garnish.
05 - 1 orange (zest it and squeeze the juice).
06 - Two tablespoons of olive oil for blending.
07 - Use fresh or frozen cranberries, about 2 cups.
08 - Add a drizzle of honey, about 1-2 tablespoons.
09 - Greek yogurt—plain, unsweetened, ½ cup.
10 - Just a dash of chili flakes—¼ teaspoon.
11 - Sweeten with ¼ cup maple syrup.

# Instructions:

01 - Toss cranberries, orange juice, orange zest, maple syrup, and nutmeg in a pan. Bring it to a boil first, then simmer for 6-10 minutes until it thickens up like a jam.
02 - Pop feta, yogurt, olive oil, and chili flakes into your food processor. Blend till it's perfectly smooth and creamy.
03 - Let the cranberry mixture sit until it's fully cooled down.
04 - Spread the whipped feta into a bowl. Pile the cranberry topping over it, scatter pistachios, drizzle honey on top, and finish with some thyme.

01 - You can prep the toppings up to two days before serving.
02 - Swap out the feta for ricotta if you'd prefer.
