Flaky Strawberry Treat (Print Version)

# Ingredients:

→ Base

01 - 1 sheet of puff pastry from the freezer, slightly softened
02 - 4 oz cream cheese, softened to room temp
03 - 3 tbsp regular white sugar
04 - 1 tsp vanilla extract, pure

→ Filling

05 - 2 cups fresh strawberries, thinly sliced after washing
06 - 1/2 tbsp cornstarch
07 - 1/2 tbsp granulated sugar

→ Egg Wash

08 - 1 egg, large
09 - 2 tsp water

→ Lemon Icing

10 - 1/2 cup powdered sugar, strained
11 - The zest from half a lemon
12 - 2-3 tsp fresh lemon juice

# Instructions:

01 - Leave the puff pastry out on your counter for about 30 minutes to soften up.
02 - Whip the cream cheese on high for a minute, then mix in sugar and whip again. Stir in vanilla. Slice strawberries and toss them with cornstarch and sugar.
03 - Roll out the softened pastry and divide it into 6 even rectangles. Lightly score an outline 1/4 inch from the edges. Lay them on a greased baking tray.
04 - Spread 1 tbsp of the cream cheese mix on each pastry, avoiding the border. Place strawberries on top.
05 - Brush the edges with the egg wash mixture. Bake in a 400°F oven for 20-25 minutes until the edges are golden.
06 - Stir the icing ingredients together until smooth and easy to drizzle, then pour over the pastries while they're warm.

01 - They taste best when eaten warm.
02 - Check that the icing is thick enough to stay on top and not run off.
