Fresh Baked Salmon (Print Version)

# Ingredients:

→ Salmon

01 - 4 pieces of salmon (7 oz each)
02 - 1 sliced lemon
03 - 2 teaspoons of garlic powder
04 - 2 teaspoons of dried oregano
05 - 2 teaspoons of dried basil
06 - 1/2 teaspoon of kosher salt
07 - 1 teaspoon of dried parsley
08 - 1/2 teaspoon of onion powder
09 - 1/4 teaspoon of black pepper

→ Topping Ingredients

10 - 1/2 cup of kalamata olives
11 - 1/3 cup of crumbled feta
12 - 1/2 cup of diced cherry tomatoes
13 - 1 tablespoon of parsley (chopped fresh)
14 - 1 tablespoon of mint leaves (chopped fresh)
15 - 1 tablespoon of olive oil
16 - Pepper and salt, as needed

# Instructions:

01 - Turn oven on and set to 400°F
02 - Blend all spices in a small bowl. Use paper towels to dry off salmon gently, then put about 1 teaspoon of mixture on each piece
03 - Lay salmon into a greased cast iron pan and scatter lemon slices around it
04 - Place in oven for 12 to 15 minutes, or until the middle reaches 145°F
05 - Stir all topping mix ingredients together in one small bowl
06 - Pour the Mediterranean mixture over salmon pieces, then finish with olive and feta topping. Pair with couscous if you'd like

# Notes:

01 - You could air fry this at 400°F for about 8 to 10 minutes
02 - Leftover salmon stays good for 3 days in the fridge
03 - Tastes great with a side of couscous made Mediterranean style
