Spicy Garlic Bok Choy (Print Version)

# Ingredients:

→ Main

01 - 8 garlic cloves, finely chopped
02 - ⅓ cup water
03 - 1 tablespoon neutral oil (like vegetable oil)
04 - 1 pound of baby bok choy or similar greens (like yu choy, baby gai-lan, cabbage)

→ Spicy Sauce

05 - 1 teaspoon sesame oil
06 - ¼ teaspoon sugar (white)
07 - ½ tablespoon Shaoxing wine (or dry sherry/chicken broth)
08 - 1 tablespoon soy sauce
09 - 1.5 tablespoons chili oil or crisp chili in oil

# Instructions:

01 - Trim the bok choy into halves, rinse them well under cold water, and let them dry.
02 - Stir together all the spicy sauce ingredients in a small dish. Put it aside for later.
03 - On medium-low heat, warm the oil in a big pan. Add the minced garlic and stir it for 10 seconds until it smells amazing.
04 - Turn the heat to medium-high. Toss in the bok choy and ⅓ cup of water. Cook for 2-4 minutes until they soften.
05 - Dump the sauce over the veggies, mix it all well, then take it off the heat and plate it up.

# Notes:

01 - Feel free to swap bok choy for other similar greens.
02 - Want it alcohol-free? Switch out the wine for chicken broth.
03 - Control the heat by adding more or less chili oil.
