Goat Cheese Cherry toast (Print Version)

# Ingredients:

→ Base

01 - 2 tsp olive oil (extra virgin recommended)
02 - 12 baguette slices, 1/2-inch thick

→ Toppings

03 - One rosemary sprig, fresh
04 - A dozen cherries, pitted and halved (use fresh or frozen)
05 - 4 tbsp (1/4 cup) soft goat cheese
06 - 4 tbsp (1/4 cup) cream cheese
07 - Coarse sea salt, 1/2 tsp
08 - 1 tbsp + 1 tsp of honey
09 - Balsamic glaze, 1 tbsp (store-bought or homemade)

# Instructions:

01 - Preheat oven to 375°F. Drizzle olive oil on the baguette slices, bake for about 8 minutes (flip halfway through). They should be crunchy on the outside, soft on the inside.
02 - On a parchment-lined pan, place the halved cherries, spritz them with olive oil, and sprinkle rosemary. Roast next to the bread for around 6 minutes. Remove rosemary sprig when done.
03 - Combine cream cheese, goat cheese, 1 tsp honey, and 1/2 tsp each of lemon juice and zest in a food processor. Blend until the mixture is silky.
04 - Smear goat cheese spread on each toasted slice, add roasted cherry halves (2-3 per slice). Drizzle balsamic glaze and the leftover honey, sprinkle with fresh rosemary and sea salt.

# Notes:

01 - Roasted cherries keep in the fridge for up to three days.
02 - Goat cheese spread stays fresh in an airtight container for five days.
