Molasses Cookies (Print Version)

# Ingredients:

01 - ½ cup turbinado sugar to coat.
02 - 2 teaspoons ground ginger.
03 - 2 teaspoons baking soda.
04 - 1 teaspoon cloves, ground.
05 - ¼ cup dark brown sugar.
06 - 1 egg.
07 - 1 teaspoon cinnamon, ground.
08 - 2¼ cups all-purpose flour.
09 - ½ cup granulated sugar.
10 - ½ teaspoon salt.
11 - ¾ cup butter, unsalted and softened.
12 - ⅓ cup molasses.
13 - 24 large marshmallows.

# Instructions:

01 - Blend sugars and butter until smooth. Add the egg and molasses, mixing well. Stir together dry stuff in a separate bowl before adding to the wet mixture.
02 - Shape dough into a ball, cover it in plastic wrap, and pop it in the fridge for about 90 minutes.
03 - Preheat your oven to 350°F. Cover cookie sheets with parchment paper.
04 - Flatten a few tablespoons of dough, tuck it around a marshmallow, and roll it all in turbinado sugar.
05 - Bake for 9-10 minutes until cracks form and the marshmallow peeks through. Let them sit on the pan 10 minutes before putting them on a rack to cool.

# Notes:

01 - Take them out before the marshmallow melts away completely.
02 - Cookies will settle and flatten as they cool down.
