Ground Beef Rice Skillet (Print Version)

01 - 1 cup cheddar cheese, grated
02 - 1 pound lean ground beef
03 - 1½ cups beef stock
04 - 1 medium red bell pepper, chopped
05 - 1 teaspoon pepper
06 - 10 ounces Rotel tomatoes with chilies
07 - Fresh parsley for sprinkling (optional)
08 - 3 garlic cloves, minced
09 - 1 cup white rice
10 - 1 medium yellow onion, finely diced
11 - 1 teaspoon salt
12 - 1 tablespoon Worcestershire sauce

# Instructions:

01 - Grab a large skillet and warm it over medium heat. Toss in the ground beef, garlic, salt, and pepper. Stir occasionally and let it cook until the meat has browned nicely. Drain the fat, then put the skillet back on the heat.
02 - Add the chopped onion and red pepper to the beef in the skillet. Stir and cook together for a few minutes, about 3-4, until they begin to soften and smell amazing.
03 - Stir the rice into the seasoned beef, then pour in the undrained Rotel tomatoes, the beef stock, and Worcestershire sauce. Mix well so everything combines evenly, letting all the yummy flavors come together.
04 - Turn up the heat to get the mixture boiling, then cover the skillet and drop the heat to low. Let it simmer gently for around 20 minutes, checking that the rice cooks up nice and soft.
05 - Switch off the heat, scatter the grated cheese over the mixture, and cover the skillet again. Let it sit for about 5 minutes so the cheese melts into gooey perfection. Sprinkle on some parsley if you feel fancy!
