Hot Honey Feta Chicken (Print Version)

# Ingredients:

→ Hot Honey

01 - 1 1/2 teaspoons of your favorite hot sauce (like Cholula or Frank's)
02 - 1/3 cup (110g) of regular honey
03 - A little less than 1 teaspoon of chili flakes

→ Chicken Seasoning

04 - A pinch (1/4 teaspoon) of cayenne pepper
05 - 1/2 teaspoon of both garlic and onion powders
06 - 2 teaspoons of smoked or sweet paprika
07 - 1/2 teaspoon dried oregano leaves
08 - A teaspoon of sea salt
09 - 1/2 teaspoon black ground pepper

→ Main Ingredients

10 - Plain flour, around 1/4 cup (35g)
11 - Two large eggs, already whisked
12 - Two chicken breasts, weighing about 250g (9oz) each
13 - Vegetable oil, 6 to 8 tablespoons for frying
14 - Panko breadcrumbs, 1 cup (65g)
15 - 200g crumbled feta cheese (about 7oz)

# Instructions:

01 - Combine the honey with chili flakes and hot sauce in a bowl. Microwave for 20 seconds or warm it in a small pan until it just starts bubbling. Let it cool down.
02 - Cut each chicken breast into two thinner fillets by slicing horizontally. Mix all the seasoning ingredients together in a small bowl.
03 - Set out three plates or bowls: one for half the seasoning and flour, another for the beaten eggs, and the last one with breadcrumbs mixed with the rest of the seasoning. Dip each chicken piece in this order.
04 - Heat a large skillet with oil over medium-high heat. Fry each coated piece for around 3-4 minutes per side, ensuring they're golden and fully cooked through.
05 - Sprinkle the fried chicken with crumbled feta and broil until the cheese turns slightly golden. Before serving, drizzle generously with the cooled spicy honey.

# Notes:

01 - You can bake this at 430°F for about 18 to 20 minutes instead of frying.
02 - Prepare the hot honey ahead of time and keep it in the fridge.
03 - Goes great with a side of arugula and crispy potato wedges.
