Jalapeño Cheddar Tuna Melt (Print Version)

# Ingredients:

01 - 5 oz canned yellowfin tuna, drained.
02 - 2 tbsp diced green onions.
03 - 2 tbsp chopped jalapeño peppers.
04 - 1 tbsp mayonnaise.
05 - 1 tbsp plain yogurt.
06 - 1 tsp spicy grain mustard.
07 - 1 tsp of your favorite hot sauce.
08 - Season with salt and pepper.
09 - 2 slices of thick sandwich bread.
10 - 2 slices of strong cheddar cheese.
11 - Extra jalapeño slices to garnish.

# Instructions:

01 - Mix tuna, green onions, jalapeños, mayo, yogurt, mustard, hot sauce, and salt and pepper till blended.
02 - Lightly toast the bread until golden.
03 - Spread the tuna mix on the toast. Add cheese and jalapeño slices on top.
04 - Broil for about 2 minutes to melt the cheese completely.

# Notes:

01 - Go for tuna in oil to get richer flavor.
02 - Serves 2 if served with side dishes.
03 - Play with jalapeño amount to tweak spice level.
