Mix together salt, pepper, cayenne, paprika, chili powder, garlic powder, and onion powder. Sprinkle half over the chicken, keeping the rest for later use.

In a pan on medium heat, warm up the oil. Cook chicken on both sides for around 3-4 minutes each until golden. Take it out of the pan.

In the same pan, add rice, lime juice, chicken stock, and the leftover spice mix. Stir it all together, then return the chicken, placing it on top.

Put a lid on the pan and let everything simmer for 20-25 minutes until the liquid is soaked up. Once done, fluff the rice, sprinkle cilantro, and add some extra lime juice before digging in.
