One Pan Lime Chicken (Print Version)

# Ingredients:

→ Protein

01 - 6 chicken thighs (no bones or skin) or 4 chicken breasts, flattened evenly

→ Spices

02 - 3 tsp of chili powder
03 - 1 tsp of smoked paprika
04 - 1 tsp of garlic powder
05 - 1 tsp of onion powder
06 - A pinch of cayenne pepper
07 - 1 tsp of salt
08 - 1/4 tsp of ground black pepper

→ Additional Items

09 - 2 tablespoons of cooking oil
10 - Juice from 1 lime (extras for serving)
11 - Chopped cilantro for garnishing
12 - 1 cup of uncooked white rice
13 - 2 1/4 cups of chicken stock

# Instructions:

01 - Mix together salt, pepper, cayenne, paprika, chili powder, garlic powder, and onion powder. Sprinkle half over the chicken, keeping the rest for later use.
02 - In a pan on medium heat, warm up the oil. Cook chicken on both sides for around 3-4 minutes each until golden. Take it out of the pan.
03 - In the same pan, add rice, lime juice, chicken stock, and the leftover spice mix. Stir it all together, then return the chicken, placing it on top.
04 - Put a lid on the pan and let everything simmer for 20-25 minutes until the liquid is soaked up. Once done, fluff the rice, sprinkle cilantro, and add some extra lime juice before digging in.
