Maple Bacon Potatoes (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil, with extra if needed
02 - 2 slices of bacon
03 - 3 medium potatoes, golden variety, unpeeled

→ Seasonings

04 - Parsley for sprinkling
05 - Black pepper, add to taste
06 - 1-2 garlic cloves, finely minced
07 - Salt, adjust to your liking
08 - 1 tablespoon maple syrup, pure
09 - Old Bay seasoning, optional amount

# Instructions:

01 - Pop bacon in the freezer to chop easily later. Cut potatoes into cubes and soak them in water so they don’t turn brown.
02 - Warm olive oil in a big skillet over medium-high heat. Drain potatoes and toss them in. Sprinkle with Old Bay, pepper, and salt. Stir every now and then during the 10 minutes of cooking.
03 - Mix in chopped bacon with the potatoes. Let it cook for about 5-6 minutes, giving time for the bacon grease to help finish cooking the potatoes.
04 - Turn heat down to medium-low. Add garlic and parsley, stirring gently for about a minute until your kitchen smells amazing.
05 - Pour maple syrup on top and cook for one more minute to get that lovely caramelized touch. Serve warm, maybe with a fried egg on top if you like.

# Notes:

01 - Red potatoes work just as well here.
02 - You can easily double or triple this for a crowd.
03 - Using turkey bacon? Extra oil will help things along.
