Grab a cookie tray and line it with parchment paper. Blend the sugar and butter together until creamy.

Combine flour, salt, and mint extract till it all comes together. Add in green food dye to the color you like. Toss in mini chocolate chips and mix.

Roll dough into balls (tablespoon-sized). Lay them on the tray and chill in the fridge for 30 mins.

Turn oven on to 375°F. Bake for 7-8 minutes till bottoms barely start to brown. Cool on the tray for 5 mins.

Coat warm cookies in powdered sugar. After they've cooled fully, cover them in another layer of powdered sugar.
