French Onion Bean Toast (Print Version)

# Ingredients:

→ Golden Onions

01 - 1/2 teaspoon coarse salt
02 - 2 teaspoons sherry vinegar
03 - 1 pound yellow onions, sliced thinly (1/8-inch thick)
04 - 3 tablespoons olive oil

→ Crispy Bread Base

05 - 4 sturdy bread slices (sourdough or whole grain works well)
06 - 2 tablespoons olive oil

→ Savory Bean Layer

07 - 2 teaspoons powder made from shiitake mushrooms
08 - 1 tablespoon yeast flakes with a cheesy flavor
09 - 3 cups cooked cannellini (or ayocote) beans with liquid
10 - A pinch of kosher salt, or as needed
11 - 2 tablespoons vegan-friendly Worcestershire sauce
12 - Freshly ground black pepper to finish

# Instructions:

01 - Warm olive oil in a big Dutch oven over medium heat. Stir in the onions and salt, cooking until soft (about 15 minutes). Lower heat to medium-low, letting onions slowly brown deeply (about 1 hour). Pour in vinegar and cook 15 more minutes until they're even darker.
02 - In a medium skillet, heat olive oil. Brown each side of the bread until crispy and golden. Place on serving plates.
03 - Using the same pan, toast nutritional yeast until fragrant (1-2 minutes). Add the cooked beans with their juice, mushroom powder, caramelized onions, and Worcestershire. Stir and let it simmer until thick and gravy-like.
04 - Place the bean mixture on the toasted slices of bread. Sprinkle ground black pepper on top and enjoy immediately.

# Notes:

01 - You can cook onions ahead and keep them in the fridge for a week, or freeze them for longer.
02 - To avoid overly hard bread crusts, consider cutting them off if you're using sourdough or whole grain bread.
03 - Save any leftover crust bits to make breadcrumbs later.
