Slow Cooker Peanut Chicken (Print Version)

# Ingredients:

01 - 2 tablespoons chopped cilantro.
02 - 1 tablespoon fresh lime juice.
03 - 1 teaspoon chili garlic sauce.
04 - 1 teaspoon toasted sesame oil.
05 - 1 tablespoon honey.
06 - 1/4 cup soy sauce (low-sodium works well).
07 - 1/2 cup chicken stock.
08 - 1/2 cup smooth peanut butter.
09 - 2 minced garlic cloves.
10 - 1/2 large onion, diced.
11 - 1 diced red bell pepper.
12 - 1.5 lbs of boneless chicken breasts.

# Instructions:

01 - Spread garlic, onion, and diced bell peppers across the bottom of your slow cooker.
02 - Lay your chicken breasts right on top of the veggie mix.
03 - In a bowl, stir together chili garlic sauce, peanut butter, sesame oil, soy sauce, broth, and honey until smooth.
04 - Spoon the sauce mixture over everything in the slow cooker.
05 - Leave it to cook for 2-3 hours on HIGH or 4-5 hours on LOW.
06 - Right before serving, mix in the cilantro and lime juice for a fresh kick.
