Irish Pub Burgers (Print Version)

# Ingredients:

→ Whiskey Aioli

01 - 2 tablespoons mayo
02 - ½ tablespoon Irish whiskey (or swap for lemon juice)
03 - 1 small garlic clove, minced or pressed
04 - ⅛ teaspoon smoked paprika
05 - Salt and pepper to your liking

→ Grilled Onions

06 - 1 small yellow onion, sliced thin
07 - 1 tablespoon olive oil

→ Burgers

08 - 1 pound ground beef (aim for 85% lean)
09 - 2 hamburger buns
10 - 2 slices of thick-cut bacon, cooked and cut in halves
11 - 2 ounces cheddar cheese, sliced or shredded
12 - Salt and pepper, to season

# Instructions:

01 - Stir together mayo, garlic, whiskey, paprika, salt, and pepper in a small bowl. Chill in the fridge until ready to serve.
02 - In a large skillet, warm up the oil over medium heat. Stir onions as they cook until soft and golden, about 5-7 minutes.
03 - Shape the beef into patties and season both sides. Fry them on medium heat till cooked through, then add cheese and let it melt on top.
04 - Start with the bottom bun, stack on the burger with melted cheese, grilled onions, bacon, and whiskey aioli. Top with the other bun.

# Notes:

01 - You can use lemon juice instead of whiskey in the aioli.
02 - Double or triple the amounts if serving more people.
03 - Switch to smoked paprika for a bolder taste.
04 - Want richer onions? Stir in a little butter while cooking.
