Take your juice and pour it into a small pot on medium-low heat. Whisk in the gelatin nonstop while it warms up. Keep going until the mixture's uniform and you don’t see any powdery bits. Don't overheat it!

If using fresh fruit, blend it up until smooth. Transfer the puree into a large spouted bowl or big measuring cup. Mix in the honey now if you're using it, and stir well.

Pour the warm gelatin mix into the fruit puree (if needed). Stir or whisk well until everything looks smooth and you can’t tell the separate parts apart.

Place your molds on a baking tray to keep things steady. Carefully pour the mixture into silicone molds or an 8x8 glass dish. Fill gently without spilling. Freeze for 15 minutes to set.

Take the molds out of the freezer and gently remove the gummies. Put them in a container and store in the fridge. They'll stay good for up to a couple of weeks.
