Ginger Soy Cod (Print Version)

# Ingredients:

→ Main

01 - Four cod fillets, about 6 ounces each

→ Glaze

02 - 1 tablespoon sesame oil
03 - 2 cloves of garlic, finely chopped
04 - 1/4 cup of soy sauce
05 - 2 tablespoons of honey
06 - 2 tablespoons of rice vinegar
07 - 1 tablespoon of freshly grated ginger

→ Garnish & Serving

08 - Chopped fresh cilantro
09 - Thinly sliced green onions (2 stalks)
10 - Lime wedges
11 - 1 tablespoon sesame seeds

# Instructions:

01 - Preheat your oven to 400°F (200°C). To stop sticking, line a baking sheet with parchment paper.
02 - Grab a small bowl and stir together sesame oil, rice vinegar, honey, soy sauce, grated fresh ginger, and minced garlic until smooth.
03 - Put the fillets on the baking sheet. With a basting brush, cover each piece with the glaze you’ve made.
04 - Place the cod into the heated oven. Let it cook for 12-15 minutes. It's ready when the meat pulls apart easily when tested with a fork.
05 - Move the baked cod onto plates for serving. Add sesame seeds, chopped green onions, and cilantro on top. For an extra kick, serve with fresh lime wedges to squeeze over.

# Notes:

01 - Using high-quality, fresh cod gives the best end result.
02 - Let the cod sit in the glaze for 15-30 minutes before baking to soak up extra flavor.
03 - This dish goes great with roasted veggies or plain steamed rice.
04 - To store leftovers, keep them in a sealed container in your fridge for 2 days max.
