Preheat your oven to 400°F (200°C). To stop sticking, line a baking sheet with parchment paper.

Grab a small bowl and stir together sesame oil, rice vinegar, honey, soy sauce, grated fresh ginger, and minced garlic until smooth.

Put the fillets on the baking sheet. With a basting brush, cover each piece with the glaze you’ve made.

Place the cod into the heated oven. Let it cook for 12-15 minutes. It's ready when the meat pulls apart easily when tested with a fork.

Move the baked cod onto plates for serving. Add sesame seeds, chopped green onions, and cilantro on top. For an extra kick, serve with fresh lime wedges to squeeze over.
