Cheesy Mushrooms Fryer Snack (Print Version)

# Ingredients:

→ Mushroom Prep

01 - 12-15 white or cremini mushrooms
02 - 1 teaspoon balsamic vinegar
03 - 1/8 teaspoon black pepper, crushed
04 - 1/8 teaspoon salt
05 - 1 teaspoon olive oil

→ Filling Mix

06 - 1 tablespoon finely diced jalapeno or green chili
07 - 2 tablespoons chopped fresh cilantro
08 - 1/3-1/2 cup mozzarella cheese, grated
09 - 1/4 teaspoon paprika or mild red chili powder
10 - 1 teaspoon ground coriander
11 - 1/4 cup diced onion
12 - 1/4 cup diced bell pepper
13 - 1/4 teaspoon salt

# Instructions:

01 - Using a moist cloth, clean off mushroom caps. Pull the stems sideways to make hollow spaces.
02 - In a bowl, mix balsamic vinegar, olive oil, salt, and pepper with the mushroom caps. Set them aside for later.
03 - Toss together the chopped bell peppers, onion, cilantro, jalapeno, shredded cheese, and spices in a mixing bowl until evenly combined.
04 - Scoop the filling into the mushroom caps, pressing it in firmly with a spoon so it stays packed.
05 - Place the filled mushrooms in your air fryer basket and cook them at 320°F for about 9-10 minutes. Adjust timing for the size of the mushrooms.
06 - Let the cooked mushrooms sit for about 5 minutes before digging in.

01 - You can use any leftover filling to whip up a veggie and cheese frittata.
02 - Try swapping coriander with Italian seasoning if you’d like a change.
