Taco Doritos Bake (Print Version)

# Ingredients:

→ Base

01 - 1/2 medium onion, chopped
02 - 1 pound lean ground beef
03 - 1 tablespoon olive oil

→ Seasonings

04 - 1/2 teaspoon ground cumin
05 - 1/2 teaspoon garlic powder
06 - 1 tablespoon chili powder

→ Casserole Ingredients

07 - 1 (12 oz) can corn, drained
08 - 2 cups shredded Mexican cheese blend or cheddar, divided
09 - 1 (15.5 oz) jar salsa
10 - 2 cups crushed Doritos (Nacho Cheese flavor)
11 - 1 (14 oz) can black beans, drained & rinsed

→ Optional Toppings

12 - Cilantro, lettuce, black olives, avocado, scallions, sour cream, tomatoes

# Instructions:

01 - Turn your oven to 350°F and make sure the rack is in the center spot.
02 - Use a big skillet to heat the oil on medium-high. Break the meat apart as you cook it for 5 minutes. Toss in the onion and spices, then cook another 5 minutes.
03 - In a 9x13 dish, spread out the Doritos to cover the base evenly.
04 - Get rid of any extra grease from the beef. Mix in the corn, beans, salsa, and half the cheese. Stir until the cheese melts, then spoon it over the Doritos.
05 - Sprinkle the rest of the cheese on top, and bake for 15 to 20 minutes without a lid. It's ready once it's hot and the cheese melts. Add whatever toppings you like when serving.
