Blend mascarpone, sugar, espresso powder, vanilla, and crushed ladyfingers until everything comes together smoothly.

Scoop out bits of the mixture, about the size of a tablespoon, and roll them into little balls. Let them chill in the fridge for half an hour to firm up.

In a microwave-safe bowl, heat chocolate chips in short intervals and stir every time until they're completely melted and silky.

Take the cooled balls and either dip them straight into your melted chocolate or roll them in the cocoa powder, whichever you like best.

Sprinkle a touch of extra cocoa powder over the top, then chill again for about 15 minutes so the coating sets perfectly.
