Wedding Cookies Italian (Print Version)

# Ingredients:

01 - 5 tablespoons sugar, split up.
02 - 5 ounces of salted, roasted almonds.
03 - 1 1/2 cups plain flour.
04 - 1/4 teaspoon kosher salt.
05 - 1 teaspoon vanilla flavoring.
06 - 3/4 cup butter, softened.
07 - 4 cups powdered sugar for coating the cookies.

# Instructions:

01 - Heat the oven to 325°F. Get some parchment paper on the baking trays.
02 - Chop almonds finely in a processor with 1 tablespoon of sugar.
03 - Whip vanilla, butter, and the rest of the sugar for 3 minutes till fluffy.
04 - Stir in the flour and salt, then blend in the almond mixture till it all comes together.
05 - Make small balls, about 3/4-inch each, and place an inch apart on your trays.
06 - Cook for 22-26 minutes until bottoms turn a light golden, flipping the sheet halfway through.
07 - Let cookies sit 3 minutes, then coat with powdered sugar while warm.
08 - Once they've completely cooled, roll them in powdered sugar again.

01 - Freeze dough balls for baking cookies on demand.
02 - Sugar them when warm so the coating sticks better.
03 - Keep in a sealed container for up to a week.
