Simple Sumac Onions (Print Version)

01 - 1 tablespoon fresh parsley, finely chopped
02 - 1 large red onion, sliced thin
03 - 1 tablespoon extra virgin olive oil
04 - 1 tablespoon red wine vinegar or lemon juice
05 - 1/2 teaspoon salt
06 - 2 teaspoons sumac

# Instructions:

01 - In a mixing bowl, toss the thin onion slices with salt and sumac. Now it’s time to get your hands in there! Gently press and rub the spices into the onions for just under a minute until fully coated.
02 - Drizzle in olive oil and vinegar, then mix in the chopped parsley. Stir it up, cover it, and let it sit for at least 20 minutes so everything blends nicely.
03 - These tangy onions are good to go! Pair them with your favorite sandwiches, wraps, burgers, or salads. Planning to save some? Keep them fresh in a sealed container in the fridge for up to four days.

# Notes:

01 - As time passes, the onions will soften more. If there's extra liquid, drain it before serving.
02 - Want to switch it up? Use fresh mint or cilantro instead of parsley.
03 - Yellow or white onions can work too, but add a tiny bit of sugar since they’re not naturally as sweet as red onions.
