Turn your oven on to 400°F/200°C. Cover a big baking tray with parchment.

Cut the cauliflower into about 6 slices, each 3/4-inch thick.

Sprinkle parmesan onto the tray, and then put the cauliflower steaks on top.

Combine the oil, spices, and onion powder. Coat the cauliflower slices with this mix.

Bake for 20 minutes or until the cauliflower softens.

Scatter gruyere over the steak tops and bake another 10-15 minutes, or until it’s melted and bubbly.
