Italian Chicken Panini (Print Version)

# Ingredients:

→ Base

01 - A single cooked chicken breast, sliced into two thin pieces
02 - 4 thick-cut slices of Italian-style bread

→ Spreads & Fillings

03 - A quarter cup of thin strips of roasted red pepper
04 - 2 slivers of red onion, about a tablespoon or so
05 - Pesto, 2 tablespoons for the spread
06 - 4 ounces of mozzarella cheese, low moisture and part-skim

→ For Cooking

07 - Nonstick spray for your grill or press

# Instructions:

01 - Coat two pieces of bread with a nice layer of pesto.
02 - Place chicken slices on each, split the onion, roasted peppers, and cheese evenly over them. Add the other bread slices on top.
03 - Warm up your panini press and lightly spray it.
04 - Toast the sandwiches for 3 to 4 minutes per side. Cheese should be gooey and the bread golden.
05 - Slice sandwiches into halves and enjoy while warm.

# Notes:

01 - Use whatever cooked chicken you have on hand.
02 - Thickness of the bread can change cooking time.
