Stuffed Scampi Chicken (Print Version)

# Ingredients:

01 - 3 cups shredded cheese (cheddar, mozzarella, monterey jack), divided
02 - 12 oz large pasta shells
03 - 2 lbs diced chicken tenders
04 - 3 tablespoons olive oil

→ Chicken Seasoning

05 - 1 teaspoon garlic powder
06 - 1 teaspoon onion powder
07 - 2 teaspoons paprika
08 - 1 teaspoon cayenne pepper
09 - 1/2 teaspoon freshly ground black pepper
10 - 1/2 teaspoon oregano
11 - 1/2 teaspoon salt

→ Scampi Sauce

12 - 1 lemon, zest and juice
13 - 1 cup dry white wine
14 - 5 cloves garlic, finely chopped
15 - 2/3 cup chicken broth
16 - 6 tablespoons softened butter, divided
17 - 2 tablespoons fresh parsley, minced
18 - 1/2 teaspoon red chili flakes
19 - 1/3 cup pasta water
20 - 2/3 cup heavy cream
21 - 1/3 cup parmesan cheese

# Instructions:

01 - Combine the chicken seasoning mix (keep 1 tsp for later) with the chicken pieces and olive oil. Cook them in a pan until the center hits 165°F.
02 - Mix the cooked chicken with half of the shredded cheese.
03 - Melt butter and sauté garlic. Toss in the wine and let it simmer to concentrate the flavor. Add all other sauce ingredients and cook until it thickens. While that simmers, boil the pasta shells until they're just slightly firm.
04 - Spread some sauce at the bottom of a baking dish. Stuff the pasta shells with the cheesy chicken mixture and place them snugly in the dish. Pour the rest of the sauce over the top.
05 - Finish with the remaining cheese sprinkled over the dish and bake at 375°F for 15-20 minutes until the cheese bubbles.
